So today I got off my lazy butt and made sauteed chicken with a large artichoke and a little garlic Aioli dip. The chicken breast I thawed, lightly breaded and sauteed in olive oil. I followed How to cook Artichokes and Sauce Ideas for Artichoke dipping for the rest.
The Artichoke dipping sauce turned out a lot better than I thought it would. I like lemons, but they can overpower a dish for me really easily. So I made sure to balance it with the salt and garlic. The "Moderately Healthy" bit of course is to do with the fact that mayo isn't that healthy, but I figured out the three things I made only one of them was iffy meant I still got a passing 66% lol.
I have more good news as well! I have a job...for the most part. I'll be working at a blueberry processing plant outside Salem. It's seasonal work but I should be able to save up enough to take care of rent for about 6 months or so. I'm NOT looking forward to all the manual labor I'll probably be doing. I don't mind some manual labor, but 8-10hrs of a hefty woman standing and sorting scares me. On the other hand I'll be doing this weight loss program at the same time so it'll probably mean more weight loss for me!
